Haven't done it over the internet and have only done it in informal tests on my
small LAN - but here are some thoughts

I don't think data transfer is secured in any way. You may want to consider trying
stunnel (haven't done it myself) for the connection and route everything though the
encrypted tunnel (or some other kind of VPN).
One factor to consider is how the Palms will access the internet - having sync
software installed on a workstation vs having the Palm connect via TCP directly to
the internet server. I think a direct TCP connection is how the wireless ones do
it but regular ones can also work this way - some may require additional software
on the workstation and/or on the Palm

This requires the creation of a whole sublevel system (and any sychronization
issues that might create) but also possibly provides an offline synchronization
ability (ie the Palm could sync to the workstation and the workstation could sync
to the internet application at different times - it depends on how up-to-date the
info has to be)
Hope you decide to use coldsync - I love hearing how people have used it in
networked environments
Gook luck - keep us all informed of how it goes and how you did it
