I'm using the appinfo-copy sync conduit to force the copying of the
categories

Well, the thing is:
1) When we are doing slow sync, AppInfo get copied.
2) When we are doing fast sync, AppInfo ignored.
This is fundamentally wrong.
The consequences are like this:
If you create new category in ANY application and new record in this
category - record itself got synced (.e.g dumped ), but category - no.
This limits usability of Coldsync a great deal.
Workaround woukld be to force slow sync, but this is at expences of time...
